Chicken & Black Bean Enchiladas
These Chicken and Black Bean Enchiladas are a delicious and easy-to-make Mexican-inspired dish perfect for any weeknight dinner. Packed with protein and flavor, they are sure to become a family favorite!
Ingredients:
- 2 cups cooked shredded chicken
- 1 can 15 oz black beans, drained and rinsed
- 1 cup salsa
- 1 cup shredded cheese
- 8 small tortillas
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish optional
Instructions:
Warm the oven up to 190C 375F
Shred the chicken and mix it with the black beans, salsa, cheese, onion, bell pepper, cumin, chili powder, garlic powder, salt, and pepper in a bowl
Combine well
Put a small amount of the chicken mixture on each tortilla, then roll them up tightly
Put it in a greased baking dish seam side down
If you want, you can sprinkle extra cheese on top of the enchiladas and any chicken mixture that is left over
Place the dish in the oven and bake for 20 minutes with the foil closed
Take off the foil and bake for another 5 to 10 minutes, until the cheese melts and the sauce bubbles
If you want, add fresh cilantro as a garnish before serving
