Whole30 Creamy Taco Soup



A delicious and creamy taco soup that adheres to the Whole30 guidelines. Packed with flavorful ingredients, this soup is a satisfying and nutritious meal.

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 can diced tomatoes, undrained
  • 4 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup coconut cream
  • Fresh cilantro, chopped for garnish
  • Avocado slices for garnish

Instructions:

In a large pot, brown the ground beef over medium heat

Add diced onion, minced garlic, and chopped bell pepper

Saut until vegetables are softened

Stir in diced zucchini, diced tomatoes with their juice, beef broth, chili powder, cumin, paprika, dried oregano, salt, and pepper

Bring the soup to a boil, then reduce heat and let it simmer for 15-20 minutes

Stir in coconut cream and simmer for an additional 5 minutes

Adjust seasonings to taste

Serve the soup hot, garnished with fresh cilantro and avocado slices
