Chicken Spinach Mushroom Lasagna
Ingredients:
- 9 lasagna noodles
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound chicken breast, diced
- 8 ounces mushrooms, sliced
- 5 cups fresh spinach
- 3 cups marinara sauce
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions:
Preheat the oven to 375F 190C
Cook lasagna noodles according to package instructions, then drain and set aside
In a large skillet, heat olive oil over medium heat
Add diced onion and minced garlic, saut until softened
Add diced chicken to the skillet, cook until no longer pink
Add sliced mushrooms to the skillet, cook until softened
Add fresh spinach to the skillet, cook until wilted
Stir in marinara sauce and let simmer for a few minutes
In a separate bowl, mix ricotta cheese with salt and pepper
In a baking dish, layer lasagna noodles, chicken mixture, ricotta cheese mixture, and shredded mozzarella cheese
Repeat layers until all ingredients are used, ending with a layer of shredded mozzarella cheese and grated Parmesan cheese on top
Cover the baking dish with foil and bake in the preheated oven for 25 minutes
Remove the foil and bake for an additional 10 minutes, or until cheese is bubbly and golden brown
Let cool slightly before serving
