Lemon Chicken Salad



A gluten-free salad that is cool and tasty with grilled chicken, fresh vegetables, and a tangy lemon dressing. Just 20 minutes to make a quick and healthy meal.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens gluten-free
  • 1/2 cucumber, sliced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup gluten-free croutons
  • 1/4 cup grated Parmesan cheese check for gluten-free label
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

Preheat your grill or grill pan to medium-high heat

Season the chicken breasts with olive oil, salt, and pepper

Grill the chicken for about 6-7 minutes per side until fully cooked internal temperature of 165F or 74C

Remove the chicken from the grill and let it rest for a few minutes

Then, slice it into thin strips

In a large salad bowl, combine the mixed greens, cucumber, red bell pepper, red onion, cherry tomatoes, croutons, Parmesan cheese, and fresh parsley

In a small bowl, whisk together the lemon zest, lemon juice, olive oil, minced garlic, Dijon mustard, salt, and pepper to create the dressing

Drizzle the dressing over the salad and toss to combine

Top the salad with the grilled chicken strips

Serve immediately and enjoy your gluten-free Lemon Chicken Salad!
