Vegan Palak Paneer



Palak Paneer, an Indian dish, is made vegan by using tofu instead of paneer. Tofu cubes in a creamy spinach curry with a lot of fragrant spices.

Ingredients:

  • 500g firm tofu, drained and cubed
  • 400g spinach, washed and chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt, to taste
  • 2 tablespoons oil
  • Water, as needed

Instructions:

Set a pan on medium heat and add oil

Put in the cumin seeds and let them pop

Chop up the ginger, onion, and garlic and add them

Cook the onions until they become clear

Put in the tomatoes and cook them until they get soft

It's time to cook the spinach

Take it off the heat and let it cool down a bit

Put the mixture in a blender and blend it until it's smooth

Put away

If you need to, add a little oil to the same pan and lightly fry the tofu cubes until they turn golden brown

Put away

Add the spinach puree to the same pan and bring it to a low boil

Cumin powder, red chili powder, turmeric powder, and salt should be added

Mix well

If the mixture is too thick, add water until you get the consistency you want

Put in the fried tofu cubes and cook for another 5 to 7 minutes

If necessary, change the seasoning

You can eat it hot with rice or bread
