Zucchini Noodle Peach and Watermelon Salad - The Girl in the Little Red Kitchen
Ripe peaches and watermelon, along with crisp zucchini noodles, make this salad very refreshing. It's all mixed together in a sour balsamic vinaigrette. With fresh mint and creamy feta cheese on top, it's a delicious gluten-free option that's great for a light lunch or as a side dish.
Ingredients:
- 2 medium zucchinis, spiralized into noodles
- 1 ripe peach, thinly sliced
- 2 cups cubed watermelon
- 1/4 cup chopped fresh mint leaves
- 1/4 cup crumbled feta cheese
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
In a large bowl, combine zucchini noodles, sliced peach, cubed watermelon, and chopped mint leaves
In a small bowl, whisk together olive oil and balsamic vinegar
Season with salt and pepper to taste
Pour the dressing over the salad and toss gently to coat all ingredients
Top the salad with crumbled feta cheese
Serve immediately or refrigerate until ready to serve
