Low Carb Cottage Pie
A comforting and hearty winter dish, this low carb cottage pie is a keto-friendly version of the classic. Ground beef or lamb cooked with vegetables and topped with creamy mashed cauliflower and cheese.
Ingredients:
- 1 lb ground beef or lamb
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup beef broth
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1 head cauliflower, chopped
- 2 tbsp butter
- 1/4 cup heavy cream
- 1/2 cup shredded cheddar cheese
Instructions:
Preheat oven to 375F 190C
In a skillet, brown the ground beef or lamb over medium heat
Add diced onion, garlic, carrots, and celery
Cook until vegetables are tender
Stir in beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper
Simmer for 10 minutes
In a separate pot, boil cauliflower until tender
Drain well
Mash cauliflower with butter and heavy cream until smooth
Transfer the meat mixture into a baking dish
Spread mashed cauliflower on top
Sprinkle shredded cheddar cheese over the cauliflower
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly
Serve hot and enjoy!
