  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a large bowl, cream together the softened butter and powdered sugar until light and fluffy

Stir in the vanilla extract

Gradually add the flour and salt to the butter mixture, mixing until well combined

Transfer the dough into a piping bag fitted with a 1/2 inch round tip

Pipe the dough into 2-inch long strips, leaving space between each strip on the prepared baking sheet

Bake the cookies for 10-12 minutes or until the edges turn golden brown

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely

Melt the semisweet chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth

Spread a layer of melted chocolate on the flat side of half the cookies

Top with the remaining cookies to create sandwich cookies

Allow the chocolate to set before serving
