Vegan Pea Mint Soup
A refreshing and vibrant vegan soup bursting with the flavors of green peas and mint. Perfect for a light lunch or dinner, this soup is both healthy and delicious.
Ingredients:
- 4 cups vegetable broth
- 4 cups frozen green peas
- 1 cup fresh mint leaves
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Juice of 1 lemon
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Cut up the onion and garlic and add them
Cook the onion until it turns clear
Set the pot on low heat and add the vegetable broth
Put in the frozen green peas and cook for 5 to 7 minutes, until the peas get soft
Add the fresh mint leaves and cook for two more minutes
Take it off the heat and let it cool down a bit
With a blender, blend the soup until it is smooth
To taste, add salt, pepper, and lemon juice
If you want, you can serve it hot with extra mint leaves on top
